Preparing the Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. This removes excess starch. In a rice cooker or pot, combine the rinsed rice and water. Cook according to the rice cooker instructions or bring to a boil then reduce heat and simmer for about 20 minutes until the water is absorbed. Let it sit covered for 10 minutes. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until dissolved. Pour this mixture over the cooked rice and gently fold it in. Let the rice cool to room temperature before assembling the sushi.

Prepare Your Workspace

Lay out a bamboo sushi mat and place a sheet of nori shiny side down on the mat.

Spread the Rice

With wet hands, take a handful of sushi rice and evenly spread it over the nori, leaving about 1 inch at the top edge. Press the rice down gently.

Add Fillings

Place your desired fillings (avocado, cucumber, carrot, bell pepper, etc.) in a line across the rice, about 1 inch from the bottom edge.

Roll the Sushi

Starting from the bottom edge of the mat, carefully roll the sushi away from you, applying gentle pressure to keep the roll tight. Roll until you reach the top edge of the nori. Use a little water on the top edge of the nori to seal the roll.

Slice the Roll

With a sharp knife, slice the roll into 6-8 pieces. Wet the knife between cuts to prevent sticking.

Serve

Arrange the sushi on a plate and serve with soy sauce, wasabi (optional), and pickled ginger (optional).
