A Special Vegetarian Maggie Recipe

Here is a special creation that my family and I adore—a delicious Maggie recipe full of vibrant vegetables. This dish is a standout in our household, and I hope you enjoy it as much as we do!

Ingredients

Maggi Noodles Masala 1 packet 1/4 med-sized capsicum, chopped into small pieces 1 small carrot, roughly grated or finely chopped 1 med-sized tomato, finely chopped 3–5 green beans, very finely chopped (optional) 2 tbsp of green peas (fresh/frozen) 1/2 tsp black pepper powder 1/4 tsp Kashmiri red chilli powder 1/4 tsp zeera powder (optional) 1/3–1/2 tsp garam masala powder 1/2 tsp rai (small reddish brown seeds) 1 sprig curry leaves (optional) 1/3–1/2 tsp dhaniya powder (optional) Fairly large pinch of ajwain Less than half an inch of ginger, grated (optional) 1/2 tsp sugar (optional, enhances the taste) Lime or lemon juice (1/4 of a lime) 2 tbsp desi ghee, butter, or cooking oil (preferably olive, peanut, or sunflower) A large pinch of salt (or to taste) Kasuri methi powder or dried pudeena powder (1/5-1/4 tsp, optional) Chopped spring onions (both white and green parts, or 1 small red onion, finely chopped) 2–4 tbsp of shredded cabbage, crushed cauliflower/broccoli, or slices of mushrooms (optional) 1 cube of processed cheese or fresh paneer/tofu (5-8 1 cm cubes, optional) 2 finely chopped green chillies (1 slit and 1 finely chopped) 2 heaped tbsp of fresh green coriander, finely chopped Few fried French fries (optional) 1 tbsp coarsely crushed roasted peanuts (optional, best used in winter) 1 tbsp toasted sesame seeds (optional, best used in winter)

Method

1. Follow the instructions on the packet to boil the noodles and set aside. 2. Crush together the rai and grated ginger into a coarse paste. 3. Heat a tbsp of ghee in a pan. Sauté the mushrooms for a couple of minutes on medium flame, then keep aside. 4. Lightly fry the paneer/tofu if using, then remove and keep aside. 5. Add the remaining ghee to the same pan. Add the crushed paste and fry for a few seconds on low to medium-flame. 6. Next, add the green chillies, curry leaves (if using), and ginger garlic paste (if using). Sauté on high flame for a couple of minutes. 7. Now, add the carrots, cauliflower, beans, peas, sweet corn, and capsicum. Stir fry for another 2 minutes on medium flame. 8. Add the tomatoes and sugar, sauté for a minute on high heat. Add the dhaniya, zeera powders (if using), mix very well. Add 1 cup of hot water, heat and let everything come to a boil for about 2 minutes. 9. Add salt, Kashmiri red chilli, and black pepper powders. Mix well, followed by garam masala. Switch off the flame. 10. Add the boiled noodles, kasuri methi/pudeena powder if using. 11. Finally, add the mushrooms, grated cheese, or paneer/tofu. Also add the spring onion greens. 12. Just before serving, add the lime juice, mix well, and garnish with fresh green coriander, roasted peanuts, sesame seeds, and fried French fries if using. Serve it hot. 13. For a winter twist, reheat before garnishing.
