Ingredients:
1 cup Bengal gram (chickpeas), soaked overnight 1/4 cup dry red chilies, chopped (optional) 1/4 cup roasted peanuts, chopped 2 shallots, finely chopped 1 garlic clove, minced 2 tbsp coriander seeds, roasted and powdered 1 tsp turmeric powder 1 tsp red chilli powder 1 tsp garam masala 1/2 tsp cumin seeds 1/2 tsp asafoetida (hing) 1/4 cup coconut, grated 1 tbsp oil or ghee Salt to taste A few curry leaves, for garnish (optional)Steps to Prepare Dhokar Dalna:
Soak the Chickpeas: Soak 1 cup of Bengal gram in water overnight until they are soft. Drain and rinse the chickpeas before using. Roast the Peanuts: Chop 1/4 cup of roasted peanuts and set aside. Blend the Chickpeas: In a blender or food processor, grind the chickpeas with 1/2 tsp of roasted cumin seeds into a coarse paste. If the mixture is too dry, add a bit of water to achieve the right consistency. Prepare the Spices: In a small pan, heat a tablespoon of oil or ghee and add 1/2 tsp of asafoetida. Fry for a few seconds until fragrant. Remove and discard the asafoetida, then add 1/2 tsp of cumin seeds and fry for another 30 seconds. Mix and Cook the Base: Add the chickpea paste to the pan with cumin seeds and cook for 5-7 minutes on medium heat, stirring frequently to prevent burning. Enhance the Flavor: Add the chopped shallots, garlic, red chilies, and turmeric powder. Cook for about 2 minutes, stirring well. Dalna Formation: Add 1 tsp of red chilli powder, coriander powder, and garam masala to the pan. Season with salt and stir well. Cook for an additional 2-3 minutes. Toss with Coconut: Stir in the grated coconut and cook for 2 more minutes until the mixture starts to caramelize. Final Touches: Add the roasted peanuts to the mixture and cook for 1-2 minutes more. If you have curry leaves, sprinkle them on top for garnish. Serve: Serve Dhokar Dalna hot with steamed rice, roti, or b?tanttayi (Indian bread).Cooking Dhokar Dalna requires a bit of time and patience, but the flavors that result are worth every minute.
