For the Misal

1/4 cup farsan (crispy snack mix) 1/4 cup sev (thin gram flour vermicelli) 2-4 pav (soft bread rolls) Lemon wedges for garnish

Instructions

For the Usal Sprout Curry

In a large pan, heat the vegetable oil over medium heat. Add cumin seeds and mustard seeds. Let them sizzle. Add the chopped onions and sauté until they become translucent. Sauté the minced garlic and ginger for a few more minutes until they release their fragrance. Add the turmeric powder, red chili powder, and garam masala. Cook for a couple of minutes to toast the spices. Add the chopped tomatoes and cook until they become soft and the oil starts to separate from the mixture. Add the sprouted moth beans or mixed sprouts. Mix well. Add water to cover the sprouts and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 15-20 minutes or until the sprouts are cooked and the curry thickens. Add more water if needed. Season with salt and cook for a few more minutes.
