Understanding Low-Carb Meals
Let’s be clear: there is no such thing as a “carb-free meal.” Period. ALL foods have some amount of carbohydrates, even plain meat. So, what you really want is a very low-carbohydrate meal. Something under 10 to 15g of total carbs. Since this means you’re not eating bulky foods like grains or large amounts of vegetables, you need extra fat when eating super low-carb. The basic blueprint for this kind of meal is 6 to 8 ounces of high-quality meat, a serving or two of low-carb vegetables, and 2 to 4 ounces of fat.
Possibilities are endless, but here are a few of my favorites:
Grilled Steak
A great cut of steak with blue cheese crumbles, creamed spinach, and a cauliflower mash is a perfect meal. The steak is rich and filling, while the other ingredients add flavor and nutrition.
Chicken Parmesan
Made with a grilled boneless skinless chicken breast, homemade marinara, and shredded parmesan and mozzarella cheeses, this dish is a low-carb twist on a classic. Serve it with steamed green beans for a well-rounded meal.
Ham and Vegetable Frittata
This frittata is packed with nutrients and flavor. Topped with a hollandaise sauce, it’s a perfect dish for a low-carb brunch or dinner.

My most frequent dinner is a bowl of vegetable soup. Homemade in large batches and frozen in 1- or 2-cup portions, it’s a low-fat meal that can be easily supplemented with diced ham, cubes of steak/hamburger, or steamed shrimp for added protein. Since this is fairly low-fat, I usually have some cheese or plain yogurt on the side to balance it out.
