Ingredients:

8 to 10 ounces of ground beef 1 medium chopped onion 1/2 green pepper (chopped) Mushrooms (fresh or canned) 3/4 jar of pasta sauce (Krogers or Prego brand, with Basil, Mushroom, or 3 Cheese flavor) Garlic, oregano, and basil to taste (optional Bay leaf if available) 2 tablespoons of butter or half and half Pasta (1 to 1 1/2 servings)

Instructions:

Heat a pan and sauté the ground beef, onion, green pepper, and mushrooms until the meat is browned. Drain the excess fat and transfer the mixture to a separate pan. Add the pasta sauce and cook until it starts to simmer. Add garlic, oregano, and basil to taste, and optional Bay leaf. Bring to a boil, then reduce to a simmer and cook for 30–40 minutes, or until the flavors have melded well. Cook pasta in boiling water. Add 2 splashes of half and half and 2 tablespoons of butter. Combine the pasta with the sauce and let it cook through. Serve and enjoy the rich, comforting flavors of this homemade pasta sauce.

Classic Tomato Paste Pasta Sauce

The second recipe is a classic tomato paste sauce that is both rich and full-bodied. This sauce is perfect for those who enjoy the depth of tomato flavors without the need for additional meat.

2 large cans of crushed tomatoes 1 small can of tomato paste 2–4 cloves of finely chopped garlic 1 tablespoon of oregano 1 teaspoon of crushed red pepper 2 tablespoons of olive oil Salt (to taste) Sugar or baking soda (if the recipe is too acidic)

Instructions:

Heat a pot with 2 tablespoons of olive oil until it sizzles. Add the garlic and cook until it turns a golden brown, being careful not to burn it. Add the crushed tomatoes and stir in the tomato paste and spices. Season with salt to taste, but be sparing with it. If the sauce is too acidic, add sugar or baking soda to balance it out. Bring the mixture to a boil, then lower the heat and let it simmer for a while. Serve the homemade pasta sauce out of the pot or pour it over cooked pasta.

Homemade Tomato Paste with Cèpes and Pork Sausage

For an even more adventurous palette, try this recipe that combines the richness of fresh tomatoes, the earthiness of cèpes mushrooms, the warmth of pork sausage, and the complexity of herbs. This is a more elaborate sauce that takes a bit more effort to prepare but the results are truly exceptional.

Ingredients:

Roma tomatoes from your garden (simmered with olive oil, salt, and fresh herbs) Fresh cèpes and chair à légumes pork sausage Vegetables (chopped) Fennel (sliced) Heavy cream and white wine Parmigiano reggiano cheese (shredded) Chopped fresh basil Optional: Piment d’espelette for heat

Instructions:

Simmer Roma tomatoes in olive oil with sea salt and fresh herbs until it resembles a paste. Saute cèpes and chair à légumes pork sausage with vegetables and fennel. Mix the cooked vegetables and sausage with the tomato paste and simmer for an hour or more. Add heavy cream and white wine to enhance the flavor. If desired, add a teaspoon of piment d’espelette for some heat. Top with fresh parmesan and garnish with chopped basil before serving.
