As a resident of Warsaw, my preferred bakery selling the best commercial bread, Peasant Bread, unfortunately closed down. Without any other options to buy overpriced and inferior “artisan” bread, I decided to take up baking myself. Polish bread is usually sourdough, so I began baking sourdough bread, a three-pound loaf of mixed wheat-rye bread typical for Polish cuisine, enough for my wife and me for a week. Over time, I tried various other types of bread products.

I discovered that sourdough is particularly beneficial for diabetics. Due to this, I have been sharing my bread with quite a few diabetics in the neighborhood. Sourdough bread is not just healthy; it is also incredibly versatile. From English muffins to pizza dough, from pancakes to bagels, crackers, and even dog and squirrel treats, the possibilities are endless.

The Fun and Unique Aspects of Sourdough

One of the most enjoyable aspects of sourdough baking is how much fun it can be. It’s akin to having a pet that requires daily or twice-daily care and feeding. The starter needs to be maintained, much like a living organism. The sourdough starter’s growth can become monotonous, but it also reminds me of the baking routine, especially when the starter gets to impressive proportions.

Besides being fun, sourdough is also unique. No two sourdoughs taste exactly the same, making each batch a new adventure. To really challenge yourself and expand your baking skills, try keeping a separate “discard starter” and feeding it differently. I have one that I feed with flour, water, and a little sugar, while another is fed with different types of flour at each feeding, such as rye, wheat, and white. This experimentation adds excitement and variety to each baking session.
